I agree with your statement that filet mignon doesn't have near the flavor that a rib-eye or a KC strip does. The reason why I like filet mignon better though is I usually buy select cuts and this cut in a select version is the most tender.

Since we seemed to have started a debated here about KC strip vs NY strip, can anyone tell the readers what is the difference, if any, between the two cuts of beef?
