We must be cut from the same cloth, Gerry. Most of the pork steaks I ate during my childhood were covered with Maull's BBQ Sauce. I spent the first 20 years of my misspent youth in Jefferson City and Maull's is still a popular BBQ sauce there.
Earlier this summer, when our beloved Cardinals and Royals were playing each other, the "St. Louis Post-Dispatch" ran an article about the so called rivalry between the two teams. Comparisons were made between the two towns and one discussion involved BBQ. The author stated that St Louis invented the pork steak.
Now I am still investigating this boast as I think it is hogwash. I don't think Saint Louis invented this cut, but I will admit that this cut of meat is very popular in Saint Louis. Pork steaks are a very popular cut in Jeff City too. Most of the fund raiser BBQs sponsored by the various fraternal organizations advertise that they are serving pork steaks. Most of the BBQ joints in the JC area don't feature pulled pork, but they do feature pork steaks.
I live 50 miles from KC and the stores in Warrensburg sell pork steaks on a regular basis, but this cut of pork is not near as common in the stores in KC. So who knows, maybe Saint Louis did invent the pork steak, but since I am from Missouri, you will have to show me.
I still like cooking and eating this cut of pork. Don't get me wrong, I am still a fan of pulled pork too, but when I want to eat some BBQ that makes me want to reminisce about the days of old, I will cook up some pork steaks covered with Maull's.
I may work at the Royal's ballpark and for the first time in my life I am actually a Royal's fan, but the Cardinals are my favorite Missouri team. (Truth be known, my favorite baeball team is the Red Sox.) I STILL bleed Cardinal red, but there is just as much Chief's red in my blood...................
