Saratiga Ribeye is a trimmed ribeye that my local Dierberg's sells. They take a whole rib roast trimmed of most all the fat, tie it, roll it in some rub, and cut it into steaks. Hold one...I know I have a picture somewhere.
Filets do not have the best flavor to me either, but some of the best steak I've eaten has been high quality filets (and expensive as well). A good filet and a bottle of V. Sattui Cab. sounds great to me about right now.
Flank steak? I like fajitas, and it is perhaps the only meat I marinate every time. Just like with tri-tips, I seem to have gotten into some "groove" where I just can't seem to mess them up, and they are both cheap cuts. Last time I made a saratoga ribeye, my wife told me my tri-tip was better. That was priceless.
