That there piece of beef you are referring to is called a KANSAS CITY strip. :-)

As for my preference of steaks, mine are (in order): filet mignon, rib-eye, KC strip and T-bone.

Truth be known, out of all these different beef steaks mentioned, I would still settle for a good pork steak. Pork steaks are what this poor country boy cut his BBQ teeth on.
