Thanks Jon. I've printed out your message and will follow it. Opening the joint sounds like a very good idea. I've always had the bloody joint problem, so maybe this will solve the problem. I also want to try the rub the nixt time I cook chickens. I already have a rub on the ones I plan to cook today, but will use your rub the next time. It sounds good. Bear
