Breast 160-165, thigh 170-175. I like to cut into the leg/thigh joint with a knife to let the heat get in their and cook the joint a little, that way you won't get that pink/bloody joint while the rest is cooked and done. Otherwise people tend to over cook the meat to get the joint done. Hope this helps. I just did leg 1/4's for 40 people a few weeks ago and got nothing but raves. Rubbed up with a 50/50 mix of rub mix and lemon pepper, turned out great
