Let me clarify.. They are searing these steaks on each side, Just searing them.. at high temp... then they are removing them, and letting them rest for twenty minutes..

After that, they put them back on a much cooler (400°) pit to finish cooking.. About 8 minutes longer..


They are saying that the rest in mid-cook is making the steaks turn out alot more tender than just cooking it start to finish...

The sear time varies depending on steak thickness from 1 1/2 minutes per side on up...

After the final cook you do go ahead and let the
steak rest as normal before eating also.
