I don't have a little smokety joe, but I do have a kettle and a WSM. Both these units are pretty air tight when the vents are closed. After a cook, I always close the vents, cutting off air to the fuel thereby extinguishing the coals. If your smokity joe has vents, try closing them as soon as you pull your meat from the grill.
(FYI I always reuse the unburnt fuel for the next cook.)
After you've eaten and done your fishin or whatever, secure the cover to the grill with bungie cords for transporting the grill home.
(I'd be apprehensive about dumping ash anywhere as there could be coals that ignite after you've left the scene)
