Over on the egg forum a way of cooking steaks is becoming very popular.. They call it the TRex method after its originator..
It goes like this.. On the egg.. 700° two or three
minutes per side ( depending on thickness) and then you remove the steak and let it rest for 20 minutes..
During this time you have closed your vents bringing your pit down to 400°..
Then you place your steak back in and let it finish 8 minutes or however long it takes to your liking..
Now they swear, that this resting has made a tremendous difference in the tenderness of their steaks...
I have tried it twice.. I cant see a difference.. But Im just one guy, they are many many who swear by this over there and so I want to hear what you guys think?
Ive tried it on my egg and Ive tried it on my weber grill.. Ive used steaks I have cut from a whole loin for the comparison, (so it couldnt be one was a better steak than another)
Any of you guys see any logic to this and why it would make a difference..
